Hallo, I’ve been given an extensive list of changes to make to iax.conf. Is this something I should do with WinSCP or ssh/nano, or is there a way to do it via the GUI?

You can log into the console on the server with whatever terminal program floats your boat and edit iax_custom.conf. You can’t edit iax.conf - it’s managed by FreePBX.
