Can I utilize the ssh server option to backup an in production system to an offsite server that isn’t necessarily running FreePBX? The offsite server is linnux based. I just want to have a folder on a server where the backups go. Do the SSH backups have to go to a FreePBX warm spare server?
No - fire away. Some would argue that backups like this are the first line of defense, with the warm spare being the second.

In my warm backup setup I send the backup to two different locations via SSH (one of which being the primary server) and also FTP.
This way, I have a copy on a file server (ssh), a copy on the backup server, a copy on the primary server (SSH) and an FTP server that gets backed up to a cloud service.
