Dialing *1 during a call records it fine.
Even though “On Demand Recording” in Extension is set to “enabled”, the config was rebuilt and the phone restarted, the button is still gray and doesn’t record.
Am I missing something?
What firmware version on the P370?
4_14_0 and greater should provide that functionality. It is making its way through QA now. Likely to show up for GA as >= 4_14_1.

It’s not available yet in an EPM package, but that’ll happen as soon as that team’s able to get to it. If you don’t have EPM manage your firmware (you should), it’s downloadable now:
