You can’t disable codecs on a per-route basis; you must disable them for the trunk.
For pjsip, just uncheck the desired boxes on the Codecs tab. For chan_sip, add (for example)
disallow=all
allow=ulaw&alaw
to the Peer Details.
If you really need different codecs for the same trunk on different routes, define a second (outbound only) trunk with the same credentials.
