This is something that is not limited to SIP. Any phone that can do DTMF is usable. It is SIP phones that have native transfer and three party features.
In SIP native three party calls, it is the phone itself that is acting as the conference bridge. The default feature code for this is *5. I don’t know if it is actually limited to threeway.
