I’m just going through setting up my first PBX again and the only phones I have at hand right now are the Cisco 7975 which I will need to convert from SCCP and a Cisco SPA504G. Do I have to set-up dial plans and the actual phone itself?

You could install Chan-SCCP-B from Github and not mess with the SIP load. There’s a sister project called SCCP Manager (also on Github) that will help you setup and manage the phones without having to patch Asterisk.
It’s an option.
