If I enable the Prosody xmpp server, are there any Windows or Mac clients that connect to it AND somehow tie into the phone server to show the extensions status?

You can use any XMPP client to connect to prosody but at this time their is no device state pushed to XMPP but that will be changing soon with our Presence Status stuff we are building into Rest Apps module.
OK. How about and chat client that will display the BLF status of a list of extensions? It doesn’t need to display the “Available / Out to Lunch” type status, altho that would be nice, just the BLF status.
