Hey, I work in a theater setting and am wondering if it is possible to use FreePBX internally without having to get a phone number or anything. I just want to use the system mostly to call between 3-5 other IP phones all on one network so that different crew members can communicate. Am I able to just set up the server and do this easily?
Yes.
Depends on how comfortable you are setting up a server and phones. 
Just set up your phones to direct sip dial each other

Agreed with @sorvani, a PBX might be more than you need. In fact why use IP phones if you just want intercoms? Something like this with a bunch of handsets might be sufficient.
