Can anyone tell me if the Uniden EXP1240 handsets are capable of auto answering for intercom / paging calls?

Yes they do, under extension set “internal auto answer” from disable to intercom.
I just tested it with the following firmware IPDECT/03.15/B0005/26-Feb-2014 12:52
Freepbx distro, PBX Firmware: 6.12.65-24
