I have some ATA adapters which need to have insecure=invite set for them to work properly. The problem is that I don’t see a way to set this option in the ‘extensions’ page.
Is there any clean way to have an (otherwise normal) extension where the insecure= parameter is set?
No you have to add it in the over ride file.

For those who are reading this to find a solution, The file which I edited was /etc/asterisk/sip_custom_post.conf
(there are a number of custom files, that are useful for specific uses… check (in this case) sip.conf, and notice the #include lines.).
to add the config option for extension 1301, I added the lines:
[1304](+) insecure=invite
