PJSIP trunks can have multiple SIP Sever addresses listed on one trunk correct?

Yes. The gui does not support this however.
The Match (Permit) field does permit multiple IPs/subnets/fqds separated by commas, if that’s what you’re looking for.
That would be why I could not find anything.
