High numbered types are dynamic, in that table. You need the SDP to see what they actually are, for any given session.

Your trace shows three payload types are in the SDP reported by the answering party. The third one is telephone events (i.e RFC 4733).

I think you have done allow=all. That is not a good idea. It has caused Asterisk to break in the past and always results in excessively large INVITE packets.
