Fax Email field

It appears you can only put 50 characters in the Fax Email field in the Extension Fax setting. /etc/asterisk/extensions_additional.conf shows this. It is possible to fax and have multiple emails receive the .pdf, but only if you are 50 characters or less.

Is there a way to edit the field to allow for more? So that the edit won’t get overridden on FreePBX updates?

You could create a distribution list by editing /etc/aliases. Don’t forget to run “newaliases” afterwards.
